Mohawk Chef Dave Smoke-McCluskey of Local Pop and Walker Sports/Magnolia Manor in Augusta, GA is preparing Iroquois Corn Soup with a Slow Food Ark of Taste ingredient Iroquois White Corn. Dave’s been excited in seeing so many people using heritage breeds of corn, that he asked to showcase a corn linked to his own heritage as a Mohawk, who are part of the Iroquois Confederacy.
He’ll cook two corn soups and maybe a posole from start to finish, nixtamalizing the corn with traditional ash and preparing the soups and providing Sophina Ouong with hominy for a posole, and Hipilito Sanchez with cooked hominy for a masa to make tamales.
